Susan Saunders - currently exhibiting at Palazzo

We are surrounded by landscapes that frequently reveal stunning and unexpected beauty. Behind our landscapes there is the deeper significance of ownership of territory and events that shape our history. This is concealed by the calm broad swathes of shape and colour.

In my paintings and photography, I enjoy making a show of the colour and geometry of the view.

The paintings currently in Palazzo are from two of my favourite places; the big broad areas and the ploughed fields are in Hertfordshire and the sheep and hills are around Clyro, near Hay-on-Wye.

Lemon Posset

Serves 6
You will need:-

  • 1pt Double cream
  • 2 Whole lemons
  • 2 Heaped teaspoons granulated sugar
  • Cantuccinni Biscuits
  • Fresh Strawberries

How to make:-

1. Remove the rind from the lemons (for decoration)
2. Put the cream into a saucepan and bring to the boil
3. Add the sugar and stir (make sure all the sugar dissolves)
4. Turn the heat down and leave simmering for approximately 5 minutes to reduce by 1/3
5. Take off the heat and add the juice of 2 lemons then stir again
6. Transfer into preferred serving dishes
7. Place in fridge and leave for 1 hour or until set
8. Decorate with Cantuccinni biscuits, Strawberries and Lemon zest
9. Serve

Don't worry about this affecting your dining experience in the restaurant; we have a brand new purpose built kitchen behind the restaurant specifically for outside catering and deliveries.

Thomas Charles Edward Gould

Tom first developed a love for food whist living in the Mediterranean at a young age. He then moved to Royston but his childhood memories had not been forgotten. He started out in the industry by washing dishes at The Glass House aged 16 and soon begun his training under a locally renowned chef. Since then he has worked in many local restaurants before joining the Palazzo team in October 2008.

When asked about his time here so far he said he "was honoured to have been trained in the art of Italian cooking by our head chef Luciano Caravello and was looking forward to the new challenges this year might bring particularly Palazzo a-go-go".

Here is a little bit you might not have known...

Tom has been Go carting on local circuits since the age of 12. He won the Junior British Championships aged 15. Last year he won the regional championship and is currently racing at Red lodge in Newmarket every month.
